  • 1 Pochon loaf
  • 1 cooked lobster 
  • 30 g of finely diced mango
  • 30 g of finely diced red pepper, skinned
  • 30 g of finely diced celery
  • 50 g assortment of young salad leaves
  • 50 g assortment of young herbs
  • 150 g of fresh Alaska crab meat
  • Lobster mayonnaise 
  • Lobster oil 
  • Sherry vinegar

  • Cut a slice in the Pochon loaf.
  • Fry one side of the slice of bread with lobster butter.
  • Mix the diced fruit and vegetables with the crab meat and 2 soup spoons of lobster mayonnaise.
  • Put the diced mix on the fried side of the bread.
  • Cut the lobster into slices and arrange on the slice of bread.
  • Add the salad and herb assortments, previously drizzled with oil and vinegar, to the head and tail of the lobster.
  • Decorate with micro shoots of Ruby radish and dark opal basil and a few cubes of fresh mango.
